So now that I've changed my apn and have the VPN connecting, I have come to the dread realization that visual voicemail Doesn't work now.   

I believe this is a "known issue".... But so was not being able to connect vpns over 3g, so it can't hurt to ask.

Are you with AT&T and choose AT&T with the wap.cingular APN and turned on the V3 tethering + MMS to yes?

Nope, on Rogers.
Tethering and mms works currently so I'm gonna say that I set mms/tethering properly.
VPN is up and running sucessfully.
