When I put a non iPhone SIM into my 2G the phone goes into emergency call only mode and asks me to connect to iTunes to activate the SIM for data.  I want to use the phone with no data plan, and thought that unlockit would do that for me.  Am I missing something?

unlockit won't activate it for you. you will need to use something like quickpwn for that.
unlockit.co.nz will change the APN on your phone where you cannot change it
